For a quick and easy-to-make high-fiber snack, try making this “Hot Chicks” recipe — aka spicy oven-roasted chickpeas — courtesy of the American Heart Association.2
Here’s what you’ll need:
- 2 cans of chickpeas (no-salt added)
- 2 tablespoons of canola oil
- 2 teaspoons of chili powder (sodium free)
- 1/2 teaspoon of sweet paprika
- 1/4 teaspoon of garlic powder, salt and pepper
- 1/8 teaspoon of ground cayenne pepper (hence the “Hot Chicks”)
First, preheat your oven to 425 degrees. While that’s warming up, take a baking sheet and line it with foil. Next, combine the oil and spices in a bowl together. After opening the cans of chickpeas (make sure to drain and rinse them) add the chickpeas to the lined baking sheet and pat dry to remove any extra moisture. Next, pour the oil over the chickpeas.
Now roll up your sleeves and get messy: mix together the chickpeas and oil mixture until they are evenly coated. Afterward, put the baking sheet in the preheated oven for 35 minutes. Halfway through the baking time, rotate and shake the pan for an even cooking process. Finally, take the chickpeas out of the oven and let cool. Then dig in and bon appétit!
